Dumbo Cupcakes



One of my earliest Disney movie memories is the classic tale of Dumbo.  The sweet, misunderstand elephant who just wants to be with his mother, then discovers an inner strength he didn't know he had.  Man, this story has so many messages in it, where do I even start?  Themes such as self-worth, courage, bullying, mother-son relationship, defending your family, friendship, just to name a few.  With the new live action Disney film, "Dumbo" that came out recently, I was inspired to bring some of that nostalgia home with some Dumbo themed cupcakes!

I had to get in the mood though so I went to my girl Saehee at Alohani Creations and grabbed some of her adorable Dumbo themed ears, a cute shirt found here and a Dumbo themed headband found here.  I had to stop myself with all of the cute Dumbo merch out there!

The cupcakes themselves I wanted to make a butter popcorn flavor because when I think of Dumbo, I think of the circus and what's the first thing you want at the circus?, popcorn!

This is a moist and fluffy vanilla bean cupcake with a salted caramel filling and is iced with a butter flavored buttercream.  The recipe for the cupcakes is down below, the salted caramel recipe can be found here and the buttercream recipe can be found here.  I flavored the buttercream to taste, this flavoring is one of my favorite brands.

I had to add a little magic to them, so I found these mini Dumbo imprinted cookie cutters on Etsy and cut the shape out of gray fondant.  I then used edible paint to paint the details of his cute face...seriously so easy!  The cupcake wrappers can be found here.

Vanilla Cake

Yield: 2 8" Rounds or 24 Cupcakes

ingredients:

  • 3 1/2 Cups Cake Flour
  • 2 Cups Sugar
  • 1 Cup Unsalted Butter (softened)
  • 1 tsp Salt
  • 1 TBSP & 2 tsps Baking Powder
  • 6 Egg Whites
  • 1 1/4 Cup Buttermilk
  • 1/3 Cup plus 1 TBSP Vegetable Oil
  • 1 TBSP & 1 tsp Vanilla Extract or paste

instructions:

How to cook Vanilla Cake

  1. Pre-heat oven to 350ºF
  2. 1.  In the bowl of a standing mixer, combine all dry ingredients.
  3. 2.  In a separate bowl, combine all wet ingredients.
  4. 3.  Add butter (cut into chunks) to dry ingredients until mixture is coarse and crumbly.
  5. 4. Pour half of wet mixture into dry mixture and mix on high for approximately 1 minute.  Batter will increase in size and start to look fluffy.
  6. 5.  Turn mixer to low and add half of the rest of the wet ingredients, combine, scraping down sides between each addition.  Add final amount of wet ingredients and beat on high until combined.  Be careful  not to over mix.
  7. 6.  Pour batter half way into prepared pans or cupcake liners and bake for 30 minutes (cake) or 18 minutes (cupcakes), or until toothpick comes out clean.
